Some of my recent favorites include:
Cortez the Killer - Dave Matthews band originally performed by Neil Young. This song was on DMB live in Central Park. fantastic guitar work by one Warren Haynes(sp?)
Lacuna Coil - Enjoy the Silence Originally performed by Depeche Mode on the album "Violator".

That Simple Minds song was supposedly GLU but it turns out it was Life of Agony who did the cover and some how someone thought it was GLU...
